People have been making and eating cheese for thousands of years, but the U.S. appetite for unique cheese is very young. The American Cheese Society is now getting more people in this country to share their expertise and love of cheese. And they did just that during a 2018 conference at Pittsburgh's David L. Lawrence Convention Center. From mongers to makers, buyers and sellers - even cheeses that fermented in cellars - you can sample a slice of the event.
