Preheat oven to 450 degrees.
Poke each sweet potato several times with a fork.
Bar on a foil-lined pan for 1 1.2 hours.
Lower oven temperature to 350 degrees.
Butter a 2-4 quart casserole dish.
Cut potatoes in half and scoop the insides into a large bowl.
Add 4 tablespoons butter, evaporated milk, 2 tablespoons brown sugar and 1 teaspoon of salt.
Let mixture cool.
Beat in egg yolks.
In another bowl, whip egg whites until stiff peaks form.
Fold egg whites into potato mixture.
Pour into casserole dish and bake for 30 minutes.
Add topping and bake for another 10 minutes or until a knife inserted near center comes out clean.
