Preheat oven to 350 degrees. Put turkey, gravy and stuffing in bowl of a food processor and pulse until mixture is coarse but well blended.
Measure out 1/3 cup of mixture and roll into a ball. Dip ball first in egg and then roll in breadcrumbs. Roll each croquette gently between palms into the traditional cone shape and place on a greased baking pan.
Bake for 30 minutes or until golden brown. Heat cranberry sauce in a pan and serve on side.
