RASPBERRY-CHOCOLATE HAZELNUT TART
INGREDIENTS: 2 cups toasted hazelnuts (skins rubbed off) 6 TBS packed golden brown sugar 1/4 tsp ground cinnamon 1/4 cup (1/2 stick) unsalted butter, melted 3/4 cup whipping cream 6 oz. bittersweet or semisweet chocolate (chopped) 1 pint fresh raspberries 1/4 cup seedless raspberry jam
DIRECTIONS: Preheat the oven to 325. In a food processor, finely grind the nuts, then add the sugar and cinnamon. Add the butter and process until moist clumps form. Press into a tart pan with a removable bottom. Bake until golden brown and firm to touch. Transfer to a rack and allow to cool completely.
Bring the cream to a simmer in a heavy saucepan. Remove from the heat. Add the chocolate and stir until melted and smooth. Pour the mixture into the crust. Chill until set (about 1 hour).
Arrange the raspberries on top. Stir the jam in a heavy small saucepan over low heat until melted. Brush the melted jam over the raspberries. Garnish with a little whipped cream, or shaved chocolate and a sprig of fresh mint if you have it.
5-Minute Chocolate Mug Cake - Chris Fennimore shares this recipe with OnQ viewers:
5-MINUTE CHOCOLATE MUG CAKE
INGREDIENTS: 4 tablespoons flour 4 tablespoons sugar 2 tablespoons cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) small splash of vanilla extract
DIRECTIONS: In 1 large coffee mug, add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! (This can serve 2 if you want to feel slightly more virtuous) And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of day or night!
