Ingredients:
1 1/2 pounds catfish fillets, cut into 1-inch strips
1 cup buttermilk
1/2 cup all-purpose flour
1/2 cup corn meal
1 teaspoon Lawry's Seasoned Salt
Oil for frying
Instructions:
Soak catfish strips in buttermilk for at least an hour or overnight. Mix flour, corn meal and seasoned salt in a large plastic bag. Add fish and shake to coat completely. Heat 1 inch of oil in a 10- or 12-inch high-sided skillet until it reaches 360 degrees. Carefully add catfish strips and turn once to brown on both sides. If you don't have Lawry's Seasoned Salt, you can make your own mixture with salt, sugar, paprika, onion and garlic powder. Serves 4..

Ingredients:
4 slices bacon
1 cup frozen corn
1 cup corn meal
1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 egg, beaten
1 cup buttermilk
Instructions:
Preheat oven to 400 degrees. Put bacon slices into a cold skillet over medium low heat. Cook, turning frequently until crispy. Remove bacon. Mix together dry ingredients. Beat egg and buttermilk. Add bacon grease and stir in dry ingredients until just moist. Fold in crumbled bacon and frozen corn. Pour batter back into skillet and put into oven. Bake 20 to 30 minutes until dark golden-brown and a toothpick inserted into center comes out clean. Serves 4.
